What is panning?
Panning is an artisan chocolate-making method that requires slowly pouring chocolate over a round tumbling pan full of nuts, fruits, or any other center. The result is a delicious, thick layer of chocolate over the center that is matte rather than shiny with waxes and chemical coatings. Panning is one of the oldest technical chocolate-making skills, and to this day is it a delicious treat, especially when made with vegan, gluten-free, organic European dark chocolate!
